homemade hamburger helper + quick drop biscuits
i just was feeling in the mood for something warm and comforting.
the weather cooled again this weekend and we continue to wait for springtime to really stick.
the sunlight was so warm. so delightful from inside the house. just enough breeze.
homemade hamburger helper was on the menu.
i grew up on the boxed stuff but since becoming an adult and raising a family, i’ve worked on replacing all those boxed meals with healthier versions. not just so that i can brag and be better than everyone, that’s just a bonus. but because i suffered from chronic pain for too many years and have learned so much about food and how it can be medicine.
in my downtime i like to read recipe books. and then i make them my own by using what i have or changing things out as i see fit. this way i ensure no two meals are ever the same and i drive my friends crazy when i can’t give them a recipe.
in an attempt to do better as i age and maybe leave something for my children and future grandchildren, i’m working on writing down my recipes.
Homemade Hamburger Helper
½ onion
3-4 cloves garlic
1lb ground beef (grass fed is best)
1 can beans (i had and used kidney but you can use pinto or black as well)
2 cups uncooked elbow noodles
2 cups beef broth
1 cup milk
2 heaping TBSP yogurt (or more)
off the block shredded cheese (no measurement - just to your hearts content)
sauté your onion and garlic in some grass fed butter or olive oil
(or both, i use a bit of both)
add your beef and brown
ours isn’t too greasy so just kept it all in there, no need to drain
add uncooked pasta, broth and milk. cook until noodles are soft
add your yogurt, more milk if needed to thin
yum! oh, i also added kale at the end because i had some
i did sea salt, fresh cracked pepper, paprika and cumin. and i’m so sorry, i will never have a measurement for spices. follow your heart.
quick drop biscuits - easiest thing you’ll ever make!
these are so fun to make. you can make them savory or sweet just by changing a couple things out. i usually forget to have heavy cream or i use it up too quick so i switched to using milk since i always have that and it works great.
2 cups AP flour
1 TBSP baking powder
1 TBSP sugar (if savory - 2 if sweet)
½ tsp salt or more (always more)
½ cup cold butter
¾ cup milk
mix - scoop - bake at 400 for 15 minutes
brush with butter (or cinnamon sugar + butter if sweet)
these are so great for a little garlic toast vibe with a biscuit flair for savory meal time.
you can add herbs or other spices as you see fit. really can’t go wrong!
they are great sweet in the morning for coffee date or tea time with friends.
they take no time at all to throw together and they are just happy little clouds of buttery biscuit goodness. enjoy!
the cleaning will never be done. my windows are especially gross. the backsplash needs wiped. but the sink is clean, the dishwasher running. and i’m making dinner! right now is for appreciating the sunlight coming into the kitchen and warming my spirit while i make dinner. listening to music and feeling grateful every time i see my faucet because ethan knew how much i wanted this specific one and he surprised me with it when he built me this kitchen. my favorite album to enjoy all the feels and keep me incredibly grateful these days is JJ Heller’s West Nashville Sessions.
